This easy Chicken Lo-Mein recipe is one of my go-to’s for a quick weeknight meal, especially when it’s time to go grocery shopping and the fridge is looking empty! Use whatever veggies you have on hand! And you can easily swap out the chicken for smoked sausage or shrimp.

- 4 cups raw vegetables chopped
- 2 cups cooked chicken chopped
- 10 oz spaghetti noodles
- 2 1/2 T extra virgin olive oil
- 1 T Butter
- 2 T hoisin sauce
- 3 T low-sodium soy sauce
- 1/3 cup water

- Heat 2 ½ tablespoons of olive oil in a large saute pan on low to medium heat.
- Add the vegetables to the warm oil in stages, beginning with the hardest ones first. For example, I sauteed the sliced carrots and chopped broccoli for 4 minutes before adding the zucchini and onions to the pan.
- While the vegetables are cooking, bring a large pot of salted water to a boil and add the spaghetti noodles. Boil for 10 minutes.
- Once the vegetables begin to soften and get some color on them, add a tablespoon of butter. The total saute time should be 8-10 minutes depending on how crunchy or soft you want them to be.
- Take the pan off the heat to stop the cooking and add the chopped chicken and drained noodles.
- Add the hoisin sauce and soy sauce. Stir well to coat everything.
- If you want a thinner sauce, stir in ⅓ cup of leftover pasta water.
- Serve and enjoy!
