These chocolate peanut butter cookies were born from a serious afternoon craving for chocolate and peanut butter – one of my favorite flavor combinations! I knew the afternoon ahead would be filled with school pick ups and playdates, so this time I decided to create a shortcut and bake for my kids instead of waiting to bake with them!
Devil’s food cake mix is the perfect shortcut in these cookies! I played around with the measurements to get the right balance between chocolate and peanut butter! If you want to take the peanut butter flavor to the next level add in some peanut butter chips!
The second time I made these cookies, I added a small amount of water just to make the dough more manageable.
Once the dough comes together, you have a couple options for the shape of your cookies. They don’t spread a lot when baking, so it’s really personal preference – uniform small round mounds or rustic shaped.
YUM! Which shape do you prefer? My favorites are the more “homemade” ones. Something about them reminds me of making cookies with my Mom as a kid.
After the cookies have completely cooled, store them in an airtight container for ultimate freshness!
These cookies are amazing on their own, but if you want to take it to the next level, try making ice cream sandwiches! Simply nuke the ice cream for 20 seconds to make it perfectly scoopable.
A small cookie dough scoop is the right size to squish the ice cream between these rich cookies!
Since the ice cream is soft, I recommend putting the sandwiches in the freezer for at least 15 minutes before chowing down. My family enjoyed them the next day!
OR…. You use the cookies to make the ultimate s’mores! No graham crackers or chocolate bars necessary!
How are you and your family going to enjoy these rich chocolate peanut butter cookies?

These cookies are delightful on their own but if you feel like doing something extra fun with your kids, use the cookies to make ice cream sandwiches or s’mores. For the ice cream sandwiches, soften the ice cream by putting it in the microwave for 20 seconds. After placing the soft scoop of ice cream on a cookie, gently press another cookie on top. Place the sandwiches in the freezer to let them harden.
