I got this recipe from my mom who got it from someone she worked with years ago. This is a favorite of all my friends. Some friends don’t even want the recipe because they think that some things just taste better when a specific person makes it. And for this, it looks like I am that person. Alexa’s Awesome Pumpkin Bread
Ingredients
- 4 eggs
- 3 cups sugar
- 1 (15 oz) can pumpkin
- 1 cup vegetable oil
- 2/3 cup cold water
- ½ tsp baking powder
- 2 tsp baking soda
- 1 ½ tsp salt
- 2 ½ cups all-purpose flour
- 1 tsp each ground cloves, ground nutmeg, and ground cinnamon
Directions
- Beat eggs and sugar together; then add other ingredients one at a time.
- Line your bread pans with parchment paper and spray with non-stick spray like PAM. This bread tends to stick to the pan without it.
- Pour batter equally into two loaf pans. Bake at 325 degrees for 1 1/2 hour. (Editor’s note: I made cupcakes since I don’t have two loaf pans. Baking time: 18 minutes.)
- Insert a knife in the middle to ensure the bread has cooked completely.
- Let cool, then slice and serve! Pairs nicely with cream cheese frosting and hot tea.)
